(RANCHO CUCAMONGA, CA – His name may not be as recognizable as Mario Batali, Gordon Ramsay or Wolfgang Puck; but Executive Chef Greg Stillman of the Ra Pour Restaurant and Lounge in Rancho Cucamonga’s Victoria Gardens delivers that style of cutting-edge quality cuisine in every dish he makes.

Chef Greg creates dishes with global influences that are not only contemporary they are creative in flavors and textures. He adds an artistic flair to the presentation creating a visual appeal that is artful making the cuisine as hyper-delicious as it is creative.
The menu evolves daily. “Customer reviews on YELP, OpenTable and following Chef on Twitter are highly encouraged. Customer feedback is very important to the chef, as they can help influence the menu.” says marketing agency Perry Design & Advertising.
While many of the signature and favorite selections are constant, Stillman introduces new dishes with an emphasis on seasonal ingredients. “Currently peaches and stone fruits are in season,” said Stillman, “and I am using these in different summer dishes. As seasons change, I work with foods as they come into play.”
The Inland Empire and Rancho Cucamonga has never had a restaurant of this kind. People would have to drive to L. A., Orange County or Vegas to come close to an experience like this. And now they don’t have to – it’s in their own back yard!
Ra Pour’s menu is varied: From delectable small bites – shareable appetizers – to wood-fired gourmet pizzas – to main plates that challenges the diner’s sensibilities, yet remains approachable to both the non-foodies as well as the gourmands.
Stillman is a master of mixing culinary metaphors. Among the signature offerings is a shareable dish he calls Lobster Pops. Originally Chef Greg set out to make “Lobster Fries.” But when he tried and tested it, the flavor outcome was not what he had hoped. Upon further experimentation and testing, Stillman found by pounding the lobster tail into finely ground meat, flavoring it with cumin, micro cilantro and lime, rolling the lobster meat into a ball, deep-frying and finally, putting it on a stick Lobster Pops were born and he had a best seller on his hands. Lobster Pops (6) are accompanied by a pungent lemongrass coconut sauce for dipping.

ABOUT CHEF GREG:
Stillman is a graduate of the Culinary Institute of America, New York and worked under Thomas Keller, Master Chef of Napa Valley’s French Laundry. He also spent ten years at The Patina Group as an Executive Chef working in a variety of their restaurants. “I learned the most from Joachim Splichal, Master Chef at Patina,” Greg said. “I was sent to an assortment of different restaurants giving me an exposure to different concepts and cuisines. My approach to food comes from the restaurants in which I’ve worked and in places I’ve visited and seen.” Chef Greg puts his own twists on dishes as well as authentic reproductions.
Having spent time in the Napa Valley, Stillman developed an extensive knowledge about wine. He offers a Tastings of Ra Pour option that allows people to experience a five course meal, a menu created at his discretion, prepared for the entire table and a wine pairing for each course. At $80 per person, this is a value. The 5-course dinner without the wine pairing is only $55 per person.
